When Dolceria Bonajuto was founded back in 1880, the processing of cocoa beans was still entirely manual; this resulting in a discontinuous size of the milled cocoa powder: this praline celebrates that kind of desirable imperfection, by adding to the Modica chocolate a share of cocoa nibs gifting sudden explosions of crunchiness and concentrated aroma.
