Caper is a stubborn plant, growing in the cracks between the rocks of Pantelleria. There it collects mineral essences and marine aromas that then bloom in the flowers (the ‘capers’ themselves) and in the berries, cucunci. They’re harvested by hand and salt preserved by La Nicchia to keep their natural taste unaltered.
